In this hands on culinary experience, we will travel to the French countryside by creating the all time French Classic ‘Julia Childs’ beef bourguignon.
This melt in your mouth dish is beef braised to perfection in a hearty red wine, pearl onions, mushrooms, aromatic vegetables, herbs and spices resulting in a rich mouth watering sauce. While the dish may seem intimidating to prepare, you will learn there are no secrets only patience is required. We will be preparing it the traditional method as I learned at the Cordon Bleu.
*To juump-start your palate and as a little nosh, upon arrival you will share in a few bites of bruschetta, rubbed with garlic topped with warm brie, roma tomatoes tossed in light olive oil and ribbon of fresh basil.
Class will begin with a basic review of ingredients, and steps of preparation. The beef will be seared (brown means flavor!) and braised in a bold red wine, stock. Mushrooms, chipollinis (like pearl onions but sweeter), *carrots, slivers of pancetta, garlic, bouquet Garni and fresh aromatic herbs, served along side roasted fingerling potatoes. Let me know if you wish to have country mashed instead of roasted potatoes – you decide.
*Spring salad with cucumber and pearl tomato bites in a homemade pear vinaigrette
*Dessert will be a luscious silky vanilla Panna Cotta (cream and greek yogurt based custard) a slight hint of citrus and ginger topped with a berry compote.
